Guntur, Khammam, Byadgi and Sindh dried chilli origins by buyer type

Guntur and Krishna district lots feed Sannam S4 to curry-blend packers and Mexican sauce plants. Khammam and Warangal Teja S17 goes to oleoresin extractors and Bangladeshi retail. Karnataka Haveri and Dharwad Byadgi serves paprika-colour buyers in the EU and USA. Pakistani Sindh chilli from Mirpur Khas ships Karachi for GCC diaspora retail.

Teja S17 vs Sannam S4 vs Byadgi vs Wrinkled 273: grade decoder

Teja S17 pods run 5 to 8 centimetres with capsaicin near 0.4 to 0.6 percent dry weight. Sannam S4 pods are 6 to 9 centimetre blunt-tip at 0.18 to 0.28 percent capsaicin. Byadgi is a 10 to 15 centimetre wrinkled pod bought for colour. Wrinkled 273 and Endo 5 are darker Andhra selections.

Dried chilli COA language: SHU, ASTA colour, capsaicin HPLC, moisture

A dried chilli COA lists pungency in SHU by ASTA Method 21.3, capsaicin percent by HPLC for guaranteed-content contracts, ASTA colour value, moisture below 10 percent, and foreign matter. Aflatoxin B1 and total in ppb, ochratoxin A, and Sudan I to IV negative results are reported on separate certificates for EU and US lots.

Who buys which dried chilli: oleoresin, masala packers, kimchi, hot sauce

Oleoresin extractors buy Teja by guaranteed capsaicin. Masala packers in Sharjah, Riyadh and Leicester run Sannam S4 for curry blends and Kashmiri for colour-led retail. Korean industrial kimchi plants take Sannam and Sindh lots above ASTA 80 as gochugaru substitutes. North American hot-sauce plants and Mexican pepper-sauce lines source Wonder Hot and Teja.

Dried chilli transit from Jebel Ali to Jeddah, Hamburg, New York, Busan

Indian chilli loads at Chennai or Tuticorin and reaches Jebel Ali in 8 to 12 days; Karachi lots arrive in 4 to 6. From Jebel Ali, Jeddah is 5 to 8 days, Hamburg 21 to 28, New York 28 to 35, Busan 21 to 26. We book dry, ventilated containers to protect ASTA colour.

Dried chilli pricing FOB, CFR, CIF: what moves the Guntur number

Quotes are issued FOB Chennai, Karachi or Jebel Ali, plus CFR and CIF to your port, on RFQ. The Guntur Mirchi Yard and Byadgi APMC auctions set the daily base. Variety, stemless versus with-stem, ASTA points on Byadgi, guaranteed capsaicin on Teja, steam-pasteurisation and the EU testing pack each move that base.

Dried chilli QA flow: origin lab, sample approval, supervised loading

Each lot is pre-screened at origin for aflatoxin and Salmonella before offer. We courier a 1 kilogram pod sample with a draft COA for the buyer to check SHU, ASTA and appearance. After written approval and LC or TT, bags are loaded under our supervisor, with Spices Board or SGS sealing on request.

Dried chilli container math: stemless pods, powder, flakes per 20-foot FCL

Whole stemless pods are low-density: 14 to 16 metric tonnes per 20-foot FCL in compressed bales or 25 kilogram PP bags, and 8 to 10 tonnes with stem. Powder loads 18 to 22 tonnes, flakes 14 to 17. A 40-foot high-cube doubles pod volume. LCL trials start at 5 tonnes via Jebel Ali consolidation.

Dried chilli import rules: EU EC 1881/2006, US FDA, Saudi SFDA

EU entries under HS 0904.21 need aflatoxin within EC 1881/2006, ochratoxin A below 15 ppb, the EC 396/2005 residue panel, a Sudan-dye negative certificate and an ETO-free declaration, filed through CHED-D on TRACES. US buyers file FDA prior notice and hold FSVP records. Saudi SFDA mirrors EU aflatoxin limits and requires Halal certification.

Procurement-team questions

Answers to the questions buyers ask us most often during RFQ and trial-shipment evaluation.

Teja S17, Sannam, Byadgi, or Kashmiri — which variety to specify?
Teja S17 (Andhra) is the high-pungency workhorse — 50,000–170,000 SHU, deep red, used by oleoresin extractors and Bangladeshi / Sri Lankan retail. Sannam S4 / 334 is medium pungency, balanced color — Indian curry-blend staple. Byadgi (Karnataka) is low pungency, very high ASTA color (85–125) — used by paprika / oleoresin buyers in EU / USA / Mexico. Kashmiri Mirch is mild, deep-red, premium retail — Gulf retail and high-end Indian restaurants. Spec by name on PO.
How is aflatoxin controlled?
Every lot ships with an aflatoxin test report (B1 + total aflatoxin) from an ILAC-accredited origin lab, conforming to EU 1881/2006 (B1 < 5 ppb, total < 10 ppb), USA FDA (total < 20 ppb), or buyer-specific spec. We pre-screen lots at origin and reject any seed loads exceeding aflatoxin limits before container loading. Steam-pasteurised lots add a microbiological certificate.
Can you supply ETO-free chilli for the EU market?
Yes — ethylene oxide (ETO) treatment was banned in the EU in 2021. We supply EU-bound lots with explicit ETO-free declaration on every packing list and shipping document. Sterilisation alternatives (steam, gamma irradiation where buyer accepts, high-pressure processing) are available on request. Indian export houses now route 95%+ of EU shipments as ETO-free.
What is ASTA color and why does it matter for paprika buyers?
ASTA (American Spice Trade Association) color is the standardised colorimetric extract value. Byadgi tests 85–125 ASTA — the global benchmark for natural-paprika color. Spanish ñora and Hungarian paprika test 100–140. Buyers in oleoresin / natural-color manufacturing pay premium for ASTA > 100. We provide ASTA color report on every Byadgi shipment via Indian Spices Board accredited lab.
How do you handle Salmonella risk?
Dried chilli has documented Salmonella incidence history (EU RASFF). We test every export-destined lot for Salmonella absent in 25 g (EU spec) at an ILAC-accredited Indian lab, and offer steam-pasteurised lots (BotaniGard or comparable) for buyers wanting belt-and-braces protection. Steam pasteurisation preserves color and pungency while eliminating microbial load.
